Corn Pudding

3 cups frozen corn
1/2 cup white sugar
2 tablespoons flour
1/2 teaspoon kosher salt
3 eggs, beaten well
2 cups milk
Preheat oven to 350 degrees.
Mix all ingredients together and pour into a well-buttered 9″x11″ baking dish.
Bake for approximately 50-60 minutes or until a silver knife inserted in the middle comes out clean.
We loved this! I honestly don’t think it even needs the sugar. Next time I’m going to only use a tablespoon or two and see what happens, and if it seems alright, I’ll probably try eliminating it completely.
I love how it includes eggs. Our chickens are going nuts lately and we’re getting about a dozen eggs a day…somewhat difficult for a family of 4 to keep up with. (I’ve been making a lot of omelets!)
It was simple, hearty and delicious.
