My love of avocados has been gradually growing over the past several years and now I almost can’t get enough of them. Seriously, I can eat a entire ripe, avocado sliced up with a little salt without blinking. But that’s only the beginning.
Avocados are delicious as the main player in a recipe, or as an accent, like in the tomato avocado salsa in my Turmeric Chicken Wraps! They even make a great first baby food! (Still trying to convince Elanora of this. 11 months and pretty much the only thing I can get her to do with any solid food is lick it. She’ll come around.)
The recipes I’ve found while browsing the Avocados from Mexico Community website made me go out and buy a big huge bag of avocados. Because how can you not make Bacon-Stuffed Avocados? Or Avocado Chocolate Banana Bread?!

Why have I never thought of adding guacamole to hot dogs? I’ve put it on hamburgers before, but this hadn’t crossed my mind yet and sounds delicious!
