I am absolutely in love with my grain mill. When I previously tried to eliminate white flour from our diet, it was difficult. The whole wheat flour I was buying just didn’t cut it in many of my recipes, often resulting in heavy, dense baked goods – disappointing and much too “healthy” tasting…
Since the grain mill came into our home, I have not bought all-purpose flour even once, and there’s now not a trace of it to be found in my kitchen. We don’t even miss it. I told my husband last week that we hadn’t had white flour in our house for at least 3 months now, and he was amazed – he said he hadn’t even missed it.
Fresh-ground whole wheat flour is so superior to almost any pre-ground flour you can buy. There’s no comparison. The flavor is so much better, there is so much more nutrition in freshly ground wheat (something like 80% of its vitamins and nutrients are gone 3 days after grinding!) You will hardly miss your all-purpose white flour in almost any recipe, especially if you’re using soft white wheat berries for your more “tender” baking (cookies, pancakes, etc.) The freshly ground wheat is much lighter than the whole wheat flour you buy in the store.
